Give homemade gifts from the kitchen this holiday season

(ARA) - Buttery chocolate cookie dough with chocolate chunks, nuts and marshmallows. Creamy caramels with apple cider and warm spices. These are just a taste of some of the irresistible sweets you could be gifting this holiday season.

Homemade holiday gifts deserve special presentations, but these finishing touches don't have to mean a lot of extra time or money. Break out the crafting supplies, hit up a vintage shop or venture online to gather an inspired collection of packaging materials. With a few simple tips, you can create a memorable presentation worthy of the sweet, buttery goodness inside.

* Create a candy cone. To package small, individually-wrapped candies such as Spiced Apple Caramels, find some festive paper at a craft or scrapbook store. Roll it into a cone and tape it shut at the seam. Add ribbon or other decorations and then fill the cone with candy.

* Think outside the cardboard box. Consider packaging your gifts in a simple wooden box with a festive bow tied around it. Visit your local craft store for interesting containers to help you break free of the typical cardboard variety.

Spiced Apple Caramels
Makes about 75 caramels

Ingredients:
2 cups apple cider
2/3 cup heavy cream
1 teaspoon salt
1 teaspoon apple pie spice (If you cannot find apple pie spice, substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon allspice.)
1/2 teaspoon ground cinnamon
1 1/2 cups sugar
1/4 cup light corn syrup
1/2 cup (one stick) butter, cubed
Freshly ground cinnamon or course sea salt (optional)

Directions:
Pour cider into small saucepan and simmer over medium heat until reduced to 1/3 cup; approximately 35 to 40 minutes. Set aside to cool.

Line 8-inch square pan with buttered parchment paper or aluminum foil. In small bowl, combine heavy cream, salt, apple pie spice, cinnamon and reduced cider; set aside.

In large, heavy-bottom saucepan, combine sugar and corn syrup. Cook over low heat, stirring until sugar dissolves. Insert candy thermometer and simmer until syrup reaches 234 degrees.

Remove from heat, remove thermometer and very slowly whisk in cream mixture (mixture will foam and may spatter). Add cubed butter and stir or whisk until cream and butter are fully incorporated. Return pan to heat, reinsert thermometer and cook over low heat, stirring frequently, until temperature reaches 250 degrees.

Remove from heat and pour caramel into prepared pan; let mixture cool slightly, then sprinkle with freshly ground cinnamon or sea salt, if desired. Cool completely at room temperature or refrigerate until set.

Once set, remove caramel from pan lifting out by parchment paper or foil. Cut caramel into 3/4-inch squares. Wrap each piece in small wax paper square, twisting at each end. Store caramels in airtight container in cool place or refrigerate up to two weeks.

North Pole Cookie Dough
Makes three "pints" of dough or two dozen cookies

Ingredients:
1 1/2 cups semi-sweet chocolate chips
1 2/3 cups flour
1/3 cup unsweetened cocoa powder
1 1/4 teaspoons baking soda
1/4 teaspoon salt
1 cup (two sticks) butter, softened
1/2 cup dark brown sugar, packed
1/2 cup sugar
1 1/4 teaspoons pure vanilla extract
2 large eggs
1 cup semi-sweet chocolate chunks
1 cup roasted almonds or toasted walnuts, roughly chopped
1 1/2 cups mini marshmallows

Directions:
Place 1 1/2 cups chocolate chips in microwave-safe dish. Microwave 30 seconds on high, stir and continue to microwave in 10- to 20-second intervals, stirring after each, until chocolate is melted and smooth. Set bowl aside and cool to room temperature.

In medium bowl, whisk together flour, cocoa powder, baking soda and salt. In large bowl, beat butter and both sugars using electric mixer until light and fluffy. Add melted, cooled chocolate and vanilla, blend until fully incorporated. Add eggs, one at a time, beating well after each addition. Add flour mixture slowly; mixing until incorporated. Fold in chocolate chunks, nuts and mini marshmallows.

Fill pint containers with cookie dough and refrigerate up to four days or freeze up to one month. When giving as a gift, attach following baking instructions:

Preheat oven to 350 degrees. Drop dough by rounded tablespoons, or using small cookie scoop, onto parchment-lined baking sheets, about 1 inch apart. Flatten dough slightly using back of spoon. Bake 10 to 12 minutes, until edges are lightly cracked but centers are still soft.

Remove from oven and cool slightly on baking sheet before transferring cookies to wire rack to cool completely.

Save money while hosting smashing family gatherings

(ARA) - Whether it's Christmas, New Year's, Winter Solstice, Hanukkah, or Kwanzaa, chances are you plan to host at least one family gathering this holiday season. Which means it's time for you to think of some creative ways to keep expenses down, but still have excellent food and festivities.

Here are some tips to save you time and money on your holiday planning:

* Entertain at home rather than eating out. Walmart has great deals on all the fixings you need to create fabulous holiday meals for eight people for as low as $30.

* Stock up on non perishable items ahead of the party - when sales happen. Beverages, dried and canned goods and even produce can be stored to help spread the cost out and get you the best prices. Blanch and freeze fresh vegetables so all you'll have to do is grab the freezer bag and toss in the veggies while cooking your favorite dishes.

* Plan your meals and your shopping list in advance using your grocery circular. For example, if you're serving bacon for breakfast, hang on to four strips to add in to Creamed Corn Gratin for dinner (recipe below). Or if you fix mashed potatoes for one dinner as a side dish, use the leftovers for a shepherd's pie to serve on a different night.

* Disposables may make life easier and allow you to spend more time with friends and family rather than clean-up in the kitchen. You can spice up the table decorations with paper plates and napkins featuring holiday prints, or mix and match different patterns for cups so everyone can remember which cup is theirs. However, if you have a large family gathering, the cost of using disposables might add up quickly, so consider using the dishes in your cupboard instead, and make sure you have plenty of dish detergent or dish washer soap on hand to tackle the pile.

* Look for simple-to-prepare recipes that don't require a lot of time in the kitchen, so you can spend more time visiting with your guests. A good meal doesn't have to be super fancy to be a success.

Food Network star Melissa d'Arabian has created great holiday recipes for Walmart so you can enjoy flavorful and wholesome meals for your holiday gathering and stay on budget. Here are two recipes to make for your next gathering:

Creamed Corn Gratin

Ingredients:
4 strips bacon, chopped
2 medium sweet onions, chopped
1 tablespoon fresh thyme or 1 teaspoon dried thyme
3 cans creamed corn
Salt and pepper
1 tablespoon butter (for greasing)
1/4 cup parmesan cheese

Directions:
In a large saute pan, cook bacon over medium heat until crispy. Remove bacon pieces from the pan and in the remaining bacon fat, cook onions slowly over low heat until caramelized, stirring occasionally, about 20 minutes. Add back the bacon, and the thyme and cook another minute or two to release flavors. Add creamed corn and cook over a low heat for 10 minutes. Add salt and pepper to taste. Heat broiler to high. Place the corn mixture in a buttered gratin dish. Top with parmesan cheese and broil until golden brown and bubbly, about two minutes.

Warm Cinnamon Caramel Sauce

Ingredients:
3 tablespoons water
1/2 cup sugar
1 tablespoon butter
1/2 cup heavy cream
1 teaspoon vanilla
1 teaspoon cinnamon
Pinch salt

Directions:
In a medium heavy saucepan, mix water and sugar and then place on medium high heat. Allow to boil (without stirring; only swirl pan if needed) until the mixture turns a pale golden brown, approximately seven minutes. Watch this closely, sugar burns quickly. Remove the mixture from heat, add butter and cream and stir vigorously (mixture will bubble). Return to heat and bring to boil and then remove from heat. Stir in vanilla, cinnamon and salt. Allow to cool a few minutes before drizzling over pumpkin roll cake, pie, or vanilla ice cream.

For A Delicious, Nutritious Diet, Add Apples

(NAPSI)-The old saying "an apple a day keeps the doctor away" may have more to it than many people realize.

That's because recent research at the U.S. Centers for Disease Control suggests apples may be a "superfruit" when it comes to helping your health. A diet rich in colorful fruits such as apples may help reduce your risk of stroke, type 2 diabetes and cancer and also works to address heart disease and control high blood pressure. Apples are also fat-free, saturated fat-free, sodium-free and cholesterol-free and are a good source of dietary fiber.

There are about 7,500 different kinds of apples to enjoy, but the best for baking tend to be:

• McIntosh-a medium-size, firm and juicy apple with crisp flesh and dark-red skin with green streaks.

• Rome Beauty-large, round and shiny with a slightly acid taste, rich aroma and red stripes with little spots on the skin.

• Granny Smith-green apples that are medium in size, juicy and tart.

These recipes are just two of the many delicious ways you can enjoy eating apples.

Lite Apple Crisp

Prep Time: 15 minutes

Bake Time: 35 to 45 minutes

Serves: 8

8 cups firm cooking apples, peeled, cored and sliced ½-inch thick (7 to 8 medium-size apples)

¼ cup Argo Corn Starch

⅓ cup granular sucralose sweetener

1 teaspoon cinnamon

½ cup unsweetened apple juice

1 teaspoon lemon juice

1 cup Karo Lite Syrup

4 crunchy granola bars, oats, nuts and honey flavor, crushed

Preheat oven to 350ºF. Stir apples, cornstarch, sweetener, cinnamon, apple juice and lemon juice together in a large saucepan. Add syrup and mix well. Heat over medium-high heat until the mixture just begins to boil, stirring frequently. Remove from heat and transfer to a greased 13 x 9-inch baking dish. Sprinkle crushed granola bars evenly over fruit filling. Bake for 35 to 45 minutes or until apples are tender.

Recipe Suggestion: Try this recipe with peaches, cherries or blueberries in place of apples and use ¼ teaspoon almond extract instead of cinnamon.

Caramel Sauce

Yield: Makes 4 cups

Use as a dip for fresh fruit or drizzle over ice cream or apple pie.

Prep Time: 5 minutes

Cook Time: 10 minutes

½ cup butter or margarine

2 cups brown sugar

1 cup Karo Light Corn Syrup

2 tablespoons water

1 can (15 ounces) sweetened condensed milk

1 teaspoon vanilla extract

Melt butter in a medium-size saucepan. Stir in sugar, corn syrup and water. Bring to a full boil over medium-high heat. Add condensed milk, stirring constantly. Bring to a full boil for 3 minutes. Remove from heat and add vanilla. Serve immediately or keep warm in a slow cooker or fondue pot. Dip fresh apples, pears, bananas, graham crackers or gingersnaps in the Caramel Sauce.

Recipe Tip: Prepare ahead and reheat in microwave. If sauce seems too thick, stir in 1 tablespoon water or milk.

In addition to the apples, these delicious dishes are made with the natural goodness of Argo Corn Starch and Karo Corn Syrup, which can add flavor and texture to dozens of tempting recipes.

Creativity In The Kitchen Could Pay Off

This recipe example from the 43rd contest fits the Sweet Treats category. The caramel ice cream topping in the filling and drizzled on top makes this creamy cheesecake irresistible.

Spiced Creamy Caramel-Peanut Torte

1 roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies

2 packages (8 oz each) cream cheese, softened

1 jar (12.25 oz) Smucker's® caramel ice cream topping

½ cup Jif® creamy peanut butter

⅓ cup powdered sugar

1 teaspoon vanilla

¼ teaspoon ground cinnamon

⅛ teaspoon freshly grated nutmeg or regular ground nutmeg

1 container (8 oz) frozen whipped topping, thawed

1¼ cups Fisher® honey roasted peanuts

Heat oven to 350°F. Spray 10- or 9-inch springform pan with Crisco® Original No-Stick Cooking Spray. Press cookie dough on bottom and ¼ inch up side of pan. Bake 16 to 23 minutes or until golden brown. Cool completely, about 45 minutes.

Meanwhile, in large bowl, beat cream cheese, ⅔ cup of the caramel topping, the peanut butter and powdered sugar with electric mixer on medium speed until smooth. Beat in vanilla, cinnamon and nutmeg. Fold in whipped topping until well mixed. Fold in 1 cup of the peanuts. Cover; refrigerate until crust is completely cooled.

Spoon cream cheese mixture over cookie crust. Freeze at least 30 minutes until set.

Just before serving, top cheesecake with remaining ¼ cup peanuts and drizzle with remaining ⅓ cup caramel topping. For easier cutting, wipe knife after each cut. Cover and refrigerate any remaining cheesecake.

Puff Piece: A Rich And Creamy Yet Simple Dessert

Quick and easy? What a great dessert! We made it over the weekend and fell in love. Watch out-- I'll be bringing it to the next gathering!

(NAPSI)-Some of the most delectable desserts are served at weddings or fancy restaurants. But for those with a hankering for luscious treats, many favorites can be made simply and enjoyed at any time.

One example is Croquembouche, most commonly seen as a wedding cake. An airy tower of cream puffs, this tasty creation doesn’t require a professional pastry chef to assemble-just a trip to the Frozen Dessert section of your supermarket and 10 minutes in the kitchen. Kozy Shack cream puffs create a quick Croquembouche, with flaky pastry. Be it a formal party, a friendly get-together or a family meal, the following recipe can serve as a masterful ending:

Cream Puff Tower

(Croquembouche)

2 packages (8.8 oz. each) Kozy Shack Frozen Cream Puffs®, thawed

¾ cup prepared caramel sauce

Spread 2 to 3 tablespoons caramel sauce on flat serving platter, forming a 9-inch circle. Place one ring of 11 cream puffs around the outside to form a circle; fill in the center of the circle with 6 cream puffs. Continue layering cream puffs and sauce 3 more times to form a tower. Top with one final cream puff and drizzle remaining sauce over the top.
