More Than 1 Million Americans Set to Receive Free Papa Johns Pizza If Super Bowl XLV Goes into Overtime

(BUSINESS WIRE)--With kickoff of Super Bowl XLV just two days away, more than 1 million Americans already are eligible to score a free large three-topping pizza if the game goes into overtime Sunday.

Papa John’s, the Official Pizza Sponsor of the NFL and Super Bowl XLV, announced Jan. 24 that it will give away a free pizza to everyone in America if the Super Bowl goes into overtime for the first time in history. To be eligible, all consumers need to do is register for Papa John’s online customer loyalty program, My Papa Points, at www.papajohns.com, by 11:59 p.m. ET Saturday, Feb. 5.

“The response to our Super Bowl XLV overtime promotion has been tremendous – from consumers, media, bloggers and others, and it’s a testament to the die-hard passion America has for the highest quality football and pizza – the NFL and Papa John’s,” said Andrew Varga, Papa John’s Chief Marketing Officer. “This year’s Super Bowl is being touted as one of the most evenly matched games in years, and if it goes into overtime, Papa John’s will make history with the biggest free pizza delivery of all time.”

If Super Bowl XLV goes into overtime, My Papa Points enrollees will be rewarded the next day with 25 Papa Points – the amount of points needed to redeem a large up to three-topping pizza. Consumers can redeem the 25 Papa Points for the free pizza anytime through June 30, 2011.

Papa John’s is also enhancing the Super Bowl experience by giving away $45 Papa John’s Papa Cards every 45 seconds on Super Bowl Sunday for consumers who order online at papajohns.com between 10 a.m. and 9:59 p.m. ET. Papa John’s will randomly select one online customer every 45 seconds to win a $45 Papa Card.

Super Bowl, Super Offer: Papa John’s to Give America Free Pizza If Super Bowl XLV Goes into Overtime

(BUSINESS WIRE)--No Super Bowl has ever gone into overtime. And no pizza company has ever called such a bold play: Papa John’s, the Official Pizza of the NFL and Super Bowl XLV, announced today that it is offering a free large pizza to everyone in America if Super Bowl XLV, to be played on Feb. 6 in North Texas, goes into overtime.

“The Super Bowl is the largest stage in all of sports, and being the Official Pizza Sponsor of Super Bowl XLV, there’s no better event or day to serve as a platform for our largest offer ever,” said Andrew Varga, Papa John’s chief marketing officer. “We’re going to be working overtime Super Bowl Sunday to make sure our customers have a great day with the highest-quality pizza, and we’re hoping for an unprecedented overtime so that we can deliver on this offer for America.”

To be eligible for a free large, up to three-topping pizza if Super Bowl XLV goes into overtime, all consumers need to do is register for Papa John’s online customer loyalty program, Papa Points, at www.papajohns.com any time now until 11:59 pm ET Saturday, Feb. 5, 2011. Then if Super Bowl XLV goes into overtime, the free pizza will be awarded to all Papa Points enrollees Monday, Feb. 7 in the form of 25 Papa Points – the amount of points needed to redeem a large up to three-topping pizza. Consumers can redeem the 25 Papa Points for the free pizza anytime through June 30, 2011.

Overtime has more significance than ever this postseason. Prior to the 2010 season, the NFL adopted a modified sudden death format only for the postseason. Each team now has the opportunity to possess the ball at least once in the extra quarter unless the team that receives the overtime kickoff scores a touchdown on its first possession.

Papa John’s fan and Dallas Cowboys wide receiver Miles Austin knows first-hand the excitement of NFL overtime. Austin, who is serving as spokesperson for Papa John’s Super Bowl XLV overtime offer, set a Cowboys single-game record of 250 yards receiving in his first NFL start ever in 2009, including a 60-yard touchdown reception in overtime to beat Kansas City.

A total of 27 postseason NFL games have gone into overtime, starting with the 1958 NFL Championship. Both Green Bay and Pittsburgh have experience in playoff overtimes: Green Bay is 2-3, and Pittsburgh is 2-2 in postseason overtime games.

Light eating for families: Experts suggest seafood

(ARA) - Health experts recommend young families, especially expecting moms, should aim to eat a variety of nutrient-rich foods -- those that are bursting with vitamins and minerals in every bite. A serving of seafood, for instance, packs nutrients like protein and omega-3s into only about 100 calories. For this reason, eating fish and shellfish two to three times a week is linked to healthy hearts among adults and a brain boost in babies.

Warm weather is the perfect time to learn light, delicious ways to make fish your family's new favorite.

Healthy eating made simple with seafood

Instead of deli meat sandwiches, try a tuna, crab or salmon salad with one of these creative mix-in combinations to help get to your weekly recommended servings of seafood:
* Plain yogurt, slivered almonds, diced apples and dried cranberries.
* Olive oil, capers, diced red onion and basil.
* Cottage cheese, diced celery and a splash of lemon juice.

Seafood matters most for moms-to-be

Grilled Tuna Italiano Pizza

During the hot summer months, skip the oven and go for the grill. This easy and delicious pizza is a great way to enjoy a variety of nutritious foods with your whole family without heating up the whole house.

Serves two.

Ingredients
1 (6-ounce) pre-baked individual whole-wheat pizza crust
1/4 cup shredded mozzarella cheese
1/3 cup diced roma tomatoes
1 teaspoon minced shallots
1/2 teaspoon red wine vinegar
2 teaspoons fresh-chopped basil
1/4 teaspoon fresh-crushed garlic
1 (5-ounce) can tonno tuna in olive oil

Directions
1. Preheat grill to 350 F.
2. Place pizza crust on pizza pan or directly on grill rack.
3. Sprinkle cheese over crust; grill with lid closed until cheese is melted (about seven minutes).
4. Meanwhile, in bowl, combine tomatoes, shallots, red wine vinegar and garlic; set aside.
5. Flake tonno tuna evenly over pizza.
6. Spoon tomato mixture over tuna; sprinkle basil over pizza.
7. Grill five minutes longer. Serve immediately.

Thousands of Pizza Lovers across the Country Vying for a Slice of the Papa John’s Pie in Recipe Challenge

(BUSINESS WIRE)--More than 7,000 pizza lovers spanning all 50 states think they have what it takes to create Papa John’s next menu item – and win a portion of the sales dollars in return. But there’s only room for one new pizza on Papa John’s menu. Which recipe will come out on top?

“The passion for our quality pizza and fresh ingredients is evident in every entry.”

Last month, Papa John's International, Inc. (NASDAQ: PZZA) asked its loyal customers to share their ideas for the next great specialty pizza on Facebook as part of the company’s first ever “Papa’s Specialty Pizza Challenge.” Thousands of recipes later – and with three weeks still remaining in the contest – Papa John’s finds itself sifting through a number of top contenders.

Recipes have been inspired by far-away places. There’s “The Big Texan” from a customer in Cambellsburg, Ind., “The Kentuckian” from a Papa John’s fan in Las Vegas, Nev., “Mediterranean Medley” in Dayton, Ohio, plus hundreds of interpretations of what constitutes a “Hawaiian” pizza.

Pizzas have also been named in honor of loved ones, like “Dad’s Ham & Cheese” in Lexington, Ky., “Mom’s Not Cooking Tonight!” in Overland Park, Ks., and “Grammy’s Favorite” in Valparaiso, Ind.

And then there’s pure creativity, such as “The New PB&J” from Augusta, Ga., “Kabobbin’ Kick” in Cuddy, Pa., and “The TNT! (Thin ‘n’ Tangy!) from Escalon, Calif.

“Every day there’s a new recipe, story, or name that catches our eye as customers have come out in droves to share their favorite combinations of Papa John’s ‘Better Ingredients,’” said Papa John’s Chief Marketing Officer Andrew Varga. “The passion for our quality pizza and fresh ingredients is evident in every entry.”

Through June 14, participants can enter “Papa’s Specialty Pizza Challenge” at www.facebook.com/papajohns, where they will be asked to create and name their very own specialty pie on Papa John’s fresh, never frozen original dough with sauce, cheese and a combination of up to seven Papa John’s better ingredients, including:

* Fresh-Packed Tomato Sauce: Made from vine-ripened tomatoes, which go from the vine to the can in an average of six hours
* Cheese made from 100 percent mozzarella
* 100 percent Real Meats: Bacon, Beef, Ham, Grilled Chicken, Pepperoni, Sausage, Spicy Italian Sausage
* Fresh-Cut Vegetables: Onions, Green Peppers and Roma Tomatoes
* Other high-quality ingredients: Including baby portabella mushrooms from Greece and black olives grown in the rich soils of southern Spain

But Papa’s Specialty Pizza Challenge isn’t just about recipes. Participants must also share in 250 words or less what makes their pizza so special for a chance to win. Judges will take the pizza creation, the pizza name and the story into consideration when completing their score sheets.

All entries are being featured in a gallery on Papa John’s Facebook page, from which “Papa” John Schnatter himself and his team of experts will choose ten semi-finalists. Those ten recipes will then be tested and tasted by Schnatter, a secret celebrity judge and other judges at company headquarters in Louisville, Ky. Schnatter, who personally developed many of the specialty pizza combinations currently offered by Papa John’s, and the other judges will trim the choices to the three best recipes, which will be showcased temporarily on Papa John’s menu (August 2 – August 29), with the ultimate winner being the highest-selling pizza!

And because the stakes – a portion of sales dollars from the winner’s recipe – are so high Papa John’s is offering the top three finalists a marketing budget of $1,000 to help drive sales of their respective pizzas.

Fresh Fruit Pizza
Serves 4

Ingredients:
2 8- to 9-inch tortillas, preferably whole wheat
1 tablespoon sugar
1/4 teaspoon ground cinnamon
3/4 cup mascarpone or cream cheese
2 1/2 cups thinly sliced fresh Chilean fruit including nectarines, plums, kiwi and blueberries
1/4 cup apricot jam, melted

Directions:
Preheat oven to 350 F. Sprinkle tortillas with sugar and cinnamon; place on baking sheet and bake until crisp, 10 to 12 minutes. Remove from oven; cool. Spread with cheese, leaving a 1-inch border around the edge. Arrange fruit on the cheese. Brush with jam to create a glossy finish. To serve, use a large knife to cut pizzas into quarters and serve immediately.

Salmon, Fresh Blueberries and Lemon Salad with Chive Vinaigrette
Serves 4

Ingredients:
8 cups salad greens in small pieces
1 pound salmon fillet, poached
1 1/2 cups fresh blueberries
Lemon zest to garnish
Vinaigrette:
2 tablespoons fresh lemon juice
1/2 cup olive oil
2 tablespoons white wine
Vinegar
Salt and pepper to taste
1 tablespoon fresh chives

Directions:
Divide salad greens on four salad plates. Divide salmon and arrange on greens. Sprinkle on blueberries. Top with lemon zest. In a jar with a lid, add all the vinaigrette ingredients. Shake well. Serve salads chilled with the dressing alongside.

Easy meals for under $10 get you back into fall routines

(ARA) - With the departure of summer barbecues and the approach of the busy holiday season, more than one family will rethink that familiar question ... “What’s for dinner?”

For quick, nutritious and engaging dinners, the answer is high-quality, lean protein. As the season gets busy, finding fast, easy meal solutions is an important part of falling into your autumn routines.

“When days get shorter and schedules ramp back up, few people have time to prepare complicated dinners,” says Bob Greene, exercise physiologist, personal trainer to Oprah Winfrey, and author of “The Best Life Diet Cookbook.” “However, breakfast-style fare can provide a flavorful and filling family dinner with only minutes spent in the kitchen.”

To satisfy your family’s appetite quickly and keep them feeling full longer, lean proteins take the lead. Greene recommends AllWhites and Better’n Eggs as a convenient way to add lean, high-quality protein to easy evening meals. Scrambled Egg Margarita Pizza

Scrambled eggs aren’t just for breakfast. An easy substitute for pizza sauce, scrambled eggs top a whole-wheat crust for extra fiber and nutrients.

Preparation time: 15 minutes

Ingredients:
2 cups (16 ounces) Better’n Eggs
1 12-inch whole-wheat pizza crust
2 Roma tomatoes, chopped
2 tablespoons finely chopped fresh basil
1 cup (4 ounces) reduced-fat mozzarella cheese

Directions:
Heat oven to 450 degrees. Spray a 10-inch nonstick skillet with cooking spray and pour in Better’n Eggs. Cook over medium heat. As egg starts to set, use spatula to lift edge, letting uncooked egg flow to bottom of skillet. Cook until eggs are set but still moist. Place pizza crust on a large cookie sheet and top the crust with the cooked Better’n Eggs, chopped tomatoes, basil and cheese. Bake eight to 10 minutes or until cheese is melted. Makes four servings.

Asparagus, Red Pepper and Potato Frittata

Frittatas are delicious meals that can be prepared on a stovetop using just one skillet. Preparation time – 25 minutes.

Ingredients:
2 cups (16 ounces) AllWhites
1/2 cup low-fat ricotta cheese
2 tablespoons canola oil
2 cups refrigerated hash brown potatoes
1/2 pound fresh asparagus, cut into 1-inch pieces
1 cup chopped red bell pepper
1 cup sliced mushrooms
2 tablespoons grated Parmesan cheese

Directions:
Slowly stir together AllWhites and ricotta cheese in a small bowl, stirring until smooth. Set aside. Heat oil on medium-high in 10-inch nonstick skillet. Gently stir potatoes, asparagus, red pepper and mushrooms in large bowl. Add potato mixture to skillet. Cook five to six minutes. Flip potato mixture. Pour AllWhites mixture evenly over potatoes. Cover and cook without stirring 10 to 12 minutes or until eggs are set. Remove from heat.

Place serving platter or cutting board over top of skillet. Carefully invert frittata onto platter. Sprinkle with Parmesan cheese. Makes 6 servings.

Mexican Eggs in Tortilla Cups

Ground cumin and a dose of chili powder combine with egg whites in a satisfying tortilla cup. Preparation time - 15 minutes.

Ingredients:
4 7- to 8-inch, 100 percent whole-wheat flour tortillas (100 calories and 8 grams fiber)
2 cups (16 ounces) AllWhites
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 cup reduced-fat shredded marble jack cheese
1/4 cup light sour cream
4 teaspoons salsa
2 tablespoons chopped green or spring onions

Directions:
Heat oven to 400 F. Place four 6-ounce custard cups upside down onto cookie sheet. Lightly spray both sides of each tortilla with nonstick cooking spray. Place each tortilla over custard cup, pressing lightly to cover. Bake eight to 10 minutes or until tortillas are light golden brown. Place cups upright on cooling rack.

Meanwhile, spray a 10-inch nonstick skillet with nonstick cooking spray. Cook Allwhites over medium heat. As egg starts to set, use a spatula to lift the edge of cooked eggs, letting uncooked egg flow to bottom of skillet. Cook until eggs are set but still moist. Stir in chili powder and cumin. Sprinkle with cheese.

Place each tortilla cup upright on serving plate. Fill each cup with an equal portion of AllWhites mixture. Top each with 1 tablespoon sour cream, 1 teaspoon salsa. Sprinkle with green onions. Makes four servings.

"Raisin" The Nutritional Bar With Pizza

(NAPSI)-Creative parents know that one of the best ways to get kids to eat "good for them" foods, such as fruits and vegetables, is to incorporate them into popular favorites, like pizza. A pair of recipes that use raisins to give your family a nutritional boost might seem like a stretch, but kids and adults will be delighted with the results.

Raisins rank among the top antioxidant foods, according to USDA government tests. High in potassium, raisins deliver a lot of nutrition. Just ¼ cup of raisins (1.5 oz.) equals one complete fruit serving.

Surprising Margherita Pizza

Makes 4 servings

2 tablespoons olive oil

1 large clove garlic, minced or pressed

1 prebaked pizza crust (11"), or two 8-inch crusts

2-3 Roma tomatoes, thinly sliced

⅓ cup Sun-Maid Natural Raisins

2 tablespoons thinly sliced fresh basil

½ cup shredded mozzarella cheese

¼ cup shredded Parmesan cheese

Coarse salt

Heat oven to 375°F.

Combine olive oil and garlic. Spread evenly on pizza crust. Arrange tomatoes on crust. Top with raisins and basil. Sprinkle cheeses over pizza. Dust lightly with coarse salt.

Bake on oven rack or a baking sheet for 15-18 minutes until cheese is melted and crust is lightly crisped.

Zucchini Ribbons Pizza

Makes 4 servings

1 tablespoon olive oil

1 large clove garlic, minced

1 teaspoon grated lemon zest

1 small zucchini (about 1x7")

1 prebaked pizza crust (11"), or two 8-inch crusts

½ cup (4 ounces) crumbled feta cheese or soft goat cheese

⅓ cup Sun-Maid Natural Raisins or Golden Raisins

¼ cup shredded Parmesan cheese

1 tablespoon pine nuts

Heat oven to 375°F.

Combine olive oil, garlic and lemon zest in a medium bowl. Slide a vegetable peeler firmly along the length of the zucchini to make thin "ribbons." Mix zucchini ribbons thoroughly with olive oil mixture.

Crumble feta or spread goat cheese evenly over pizza crust. Sprinkle raisins over cheese. Arrange zucchini evenly on top, lightly folding and mounding zucchini ribbons. Sprinkle with Parmesan and pine nuts.

Bake on oven rack or a baking sheet for 15-18 minutes until cheese is melted and crust is lightly crisped.

Flatbread Pizza with Wisconsin Mozzarella and Smoked Gouda

Ingredients:
Romesco Sauce:
1/3 cup canned fire-roasted tomatoes, drained
1/3 cup bottled roasted red peppers, roughly chopped
1 teaspoon roasted garlic (home roasted or purchased)
3 tablespoons slivered almonds, toasted
3 tablespoons Wisconsin Parmesan cheese, grated
1 tablespoon extra virgin olive oil
1/2 teaspoon red pepper flakes

Pizzas:
4 flatbreads, such as pocketless pita or naan
1 1/2 cups (6 ounces) Wisconsin Mozzarella cheese, shredded
1 1/2 cups (6 ounces) Wisconsin Smoked Gouda cheese, shredded
4 large Portobello mushrooms, grilled and sliced
Red pepper flakes, to taste
Fresh basil leaves, sliced, optional

Cooking Directions:
Romesco Sauce:
Place all ingredients in a blender and puree. Set aside.

Pizzas:
Preheat oven to 350 F. Place flatbreads on two large cookie sheets sprayed with nonstick cooking spray. Bake five to seven minutes. Remove from oven and top each flatbread with 1/4 of the romesco sauce.

Reset oven to 375 F. In a bowl, toss Mozzarella and Smoked Gouda cheese together. Sprinkle the cheese, divided equally, over the four flatbreads. Top each with mushroom slices and sprinkle with red pepper flakes. Bake until cheese melts and crusts crisp, about 12 minutes. Sprinkle pizzas with fresh basil, if desired.

Roast Pork Loin Sandwich with Wisconsin Smoked Swiss Cheese
Number of Servings: 6

Ingredients:
Pork:
1 1/2 pounds boneless center cut pork tenderloin
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper

Jam:
1/2 cup sugar
1/2 cup cider vinegar
2 tablespoons honey
2 yellow onions, thinly sliced

Aioli:
1/2 cup mayonnaise
2 teaspoons fresh lemon juice
1/16 teaspoon garlic, minced
2 teaspoons prepared horseradish
1/8 teaspoon cayenne pepper
1 tablespoon extra virgin olive oil
6 hamburger buns
4 cups arugula, cleaned and dried
8 ounces Wisconsin Smoked Swiss or Smoked Gouda cheese, sliced

Cooking Directions:
Pork:
Preheat oven to 350 F. Place pork in small roasting pan. Brush with oil; sprinkle with salt and pepper. Roast 50 to 60 minutes, until slightly pink in center.

Jam:
Combine sugar, vinegar and honey in medium saucepan. Simmer until sugar is dissolved. Add onions and cook over medium heat until onions are tender and golden, and most of the liquid has been absorbed, 20 to 25 minutes. Set aside to cool.

Aioli:
Combine mayonnaise, lemon juice, garlic, horseradish, cayenne pepper and olive oil
in small bowl. Set aside.

Final Preparation:
Toast buns. Thinly slice the pork. Spread both cut sides of buns with aioli, top bottom halves of buns with arugula, several slices of pork, jam and cheese. Serve warm.

Apple and Wisconsin Aged Cheddar Bread Pudding
Number of Servings: 8 to 10

Ingredients:
Custard:
4 whole eggs
4 egg yolks
2 tablespoons sugar
2 teaspoons pure vanilla extract
1/4 teaspoon salt
3 cups whole milk
1 cup heavy cream
7 cups day-old French bread, cut in 1 1/2-inch cubes

Apples:
4 cups Granny Smith apples, peeled and sliced
2 tablespoons lemon juice
1/2 cup (1 stick) butter
1/2 cup sugar
1/2 cup light brown sugar
1 1/2 teaspoon ground cinnamon
1/4 teaspoon ground cayenne pepper
2 cups (8 ounces) Wisconsin Aged Cheddar cheese, grated, divided

Cooking Directions:
Custard:
In large bowl, whisk together the eggs, egg yolks, sugar, vanilla and salt. Stir in milk and cream. Add bread and press down, making sure all of the bread is covered by the custard. Allow bread to soak while cooking the apples.

Apples:
Toss apples with lemon juice. In large skillet, melt butter over medium heat. Add apples, sugar, brown sugar, cinnamon and cayenne pepper. Cook until apples are slightly tender, eight to 10 minutes, stirring frequently. Cool 20 minutes.

Final Preparation:
Preheat oven to 325 F. Generously butter a 9-by-13-inch casserole dish. Pour half of the bread mixture into the dish. Top with half the cooked apple mixture, then with one cup of Cheddar cheese. Repeat layering with remaining ingredients. Cover casserole with waxed or parchment paper, then cover dish tightly with foil. Bake in water bath for 60 minutes. Remove foil and paper; return to oven. Increase oven temperature to 350 F. Continue to bake in water bath for 25 to 35 minutes more or until browned and puffed, and a butter knife inserted near center comes out clean. Remove from oven and allow to rest 20 minutes before serving. Sprinkle top with cinnamon and cayenne pepper, if desired.
